January 2026
Coffee Factoid of the Month
Colombia is the only country that grows coffee with harvesting happening year-round. Because of its multiple mountain ranges and varied microclimates, different regions experience peak harvest at different times—ensuring exceptional freshness and consistency throughout the year.
Our Mission This Month
When you are part of The Honor Society, every bag of coffee fuels something bigger. Your purchase helps support nonprofit charities that make a real difference. Our current partner, the American Foundation for Suicide Prevention, works to reduce suicide through research, education, and community support for those who need it most. A portion of the proceeds from every purchase goes directly to our charity of choice. Together, we turn daily rituals into meaningful impacts.

These mountainous regions are among Colombia’s most celebrated specialty coffee areas, known for volcanic soils, ideal microclimates, and deeply rooted smallholder farming traditions focused on quality and traceability.
Altitude & Processing:

This combination of traditional and modern Colombian varietals showcases the full genetic richness of the region. Caturra and Typica bring bright acidity and fruit clarity, Colombia and Castillo add balance and resilience, and Bourbon provides depth, chocolate richness, and cane sugar sweetness that round out the classic Colombian flavor profile.
Mini-Masterclass: Brewing a Bright, Balanced Cup of Colombia Single Origin
To highlight the cherry brightness, grape-and-plum sweetness, and rich chocolate-cane sugar finish of this light–medium roast—while keeping the cup clean and expressive—use this optimized approach:
1. Use a lighter brew ratio (1:16)
Light–medium roasts shine with clarity and brightness.
Example: 20g coffee to 320g water.
This showcases fruit complexity while keeping sweetness vibrant.
2. Use hot water (200–205°F)
This temperature range fully unlocks fruit acids and sugars,
allowing the cherry, grape, and plum notes to shine without tasting thin.
3. Grind at a medium-fine consistency
This increases surface area for full extraction of fruit complexity
while preserving the clean, crisp finish.
4. Use a cone-shaped dripper for clarity and aroma
Brewers like the V60, Origami, or Melitta emphasize fruit brightness, aromatics, and acidity.
Perfect for showcasing Colombia’s vibrant regional character.
5. Target a 2:45–3:15 total brew time
This brew window delivers layered fruit sweetness and chocolate depth
without pushing the cup into sourness or dryness.
